Unless there's something that affects the quantity you may end up with, or some other thing which messes with a player's available tokens that I'm unaware of, I don't see why the tokens need to be face down during the Assembly phase
This is mainly because, if you know what the ape tokens' bonus effects are, this can help you plan, and in a physical game you'd be able to look at the tokens to remind yourself that ape X will give bonus Y so I can do action A and still end up getting B during Attracting Apes phase -

Report history
Since the main board already has the information on the bonus type for each ape, right?
(Mandrill > points, Orangotan > energy, Gorilla > rage, Chimp > reactivate)
And the ape tokens from the opponents should definitely remain face down, you shouldn't be able to plan your actions depending on the token they chose.
